Chickpea Patties & Beetroot Tapenade

Nutritionally packed food gets smiles all around. We had a lot of fun forming chickpea patties using brown rice, chickpeas, carrot which we flavoured with cumin, dill, lemon and Braggs – a non-fermented soy sauce.

Some were not sure if they would like the beetroot tapenade, but when made with lightly cooked beetroot and mixed with walnuts and lemon juice then they agreed healthy also meant nice.
