Creamy veg soup requires nice cubes of veggies – carrots, kumara, potato, celery, all in a thick creamy, tasty broth with lots of onion and herbs. First we need to cut the vegetable in half to get a flat surface so it’s safe to cut. Then we make slices, turn the slices into sticks, and then we can dice them. Really nice work girls! Cook the onion and celery, add water and vegetables and herbs. We thicken it with blended cashew nuts and lemon juice, vegetable stock, and water. Remove the bay leaves before serving! The soup was very tasty.
